Sour Cream Noodle Bake

Simple and Delicious!

Ingredients:

  • 1-¼ pound Ground Chuck
  • 1 can 15-ounces Tomato Sauce
  • ½ teaspoons Salt
  • Freshly Ground Black Pepper
  • 8 ounces, weight Egg Noodles
  • ½ cups Sour Cream
  • 1-¼ cup Small Curd Cottage Cheese
  • ½ cups Sliced Green Onions (less To Taste)
  • 1 cup Grated Sharp Cheddar Cheese
Directions:
  • Preheat oven to 350 degrees.
  • Brown ground chuck in a large skillet. Drain fat, then add tomato sauce. 1/2 teaspoon salt and plenty of freshly ground black pepper. Stir, then simmer while you prepare the other ingredients.
  • Cook egg noodles until al dente. Drain and set aside.
  • In a medium bowl, combine sour cream and cottage cheese. Add plenty of freshly ground black pepper. Add to noodles and stir. Add green onions and stir.
  • To assemble, add half of the noodles to a baking dish. Top with half the meat mixture, then sprinkle on half the grated cheddar. Repeat with noodles, meat, then a final layer of cheese. Bake for 20 minutes, or until all cheese is melted.
  • Serve with crusty French bread.

Cheeseburger Soup

I got this recipe from a gal down in Atlanta, it's their families favorite soup of all time!  And I hope it will be ours too, it's SO DELICIOUS!! :)

 
I don't feel like getting up to get the recipe right now, so it'll come soon!

Ingredients:
  • 1 1/2 lb. Ground beef
  • 3/4 c. chopped onions
  • 3/4 c. diced carrots
  • 1-2 cups diced potatoes
  • 1 tsp. basil
  • 1 tsp. parsley
  • 3-4 c. Chicken Broth
  • 1 c. Milk
  • 1/3 c. flour
  • Salt and Pepeer to taste
  • 1 1/2-2 c. grated Cheddar Cheese.
Directions:
  • Brown ground beef and drain off fat. 
  • Add onions and carrots.  Saute.
  • Add to chicken broth.  add in potatoes and spices.
  • Cook till potatoes are tender (Usually takes longer than I expect.)
  • Mix the flour and milk till smooth.  Add to soup and cook till thickened.  (may need to add a little more flour)
  • Last add cheese until melted. 
  • Great with sourdough bread.

Beef and Bean Burritos


As you can tell, I'm not a red sauce fan, so for the recipe we just used green enchilada sauce.  (we also cooked the beef in some sauce too)  These were super easy, fast, and delicious!
Ingredients
  • 2 pounds Ground Beef (we used 1 lb.)
  • ½ whole Medium Onion
  • 1 can (7 Ounce) Mexican Tomato Sauce Or Enchilada Sauce
  • Salt And Pepper, to taste
  • Cumin, Oregano, Chili Powder, Garlic To Taste
  • 1 can (28 Ounce) Refried Beans
  • ¾ cups Grated Cheddar Cheese
  • 12 whole Burrito-sized Flour Tortillas
  • Extra Grated Cheese, For Sprinkling
  • Extra Sauce, For Drizzling
  • Cilantro Leaves, Optional
  • Optional Filling Ingredients: Mexican Rice, Sour Cream, Guacamole, Green Chilies, Pico De Gallo

Directions:

  • Brown ground beef with onion and season to taste. Pour in sauce and simmer over low heat. Add water if mixture gets too dry.
  • Heat refried beans in a saucepan. Add cheese and stir in till melted. Keep warm.
  • Heat tortillas in microwave for one minute.
  • Spread a small amount of beans on each tortilla. Add meat. Fold over ends, then roll up. Place two burritos on a microwave-safe plate. Drizzle red sauce over the top and sprinkle with more grated cheddar. Microwave for one minute, or until cheese is melted and burritos are very hot. Serve immediately.
  • OPTIONAL: Fill burritos with any optional ingredients you like. (I love them full, but my boys like them very plain.)

Bacon-wrapped Meatloaf

Ingredients

  • Meatloaf:
  • 1 cup Whole Milk
  • 6 slices White Bread
  • 2 pounds Ground Beef
  • 1 cup (heaping) Freshly Grated Parmesan Cheese
  • ¼ teaspoons Seasoned Salt
  • ¾ teaspoons Salt
  • Freshly Ground Black Pepper
  • ⅓ cups Minced Flat-leaf Parsley
  • 4 whole Eggs Beaten
  • 10 slices Thin/regular Bacon
  • Sauce:
  • 1-½ cup Ketchup
  • ⅓ cups Brown Sugar
  • 1 teaspoon Dry Mustard
  • Tabasco To Taste

Directions:

  • Preheat oven to 350 degrees. Pour milk over the bread slices. Allow it to soak in for several minutes.
  • Place the ground beef, milk-soaked bread, Parmesan, seasoned salt, salt, black pepper, and parsley in a large mixing bowl. Pour in beaten eggs.
  • With clean hands, mix the ingredients until well combined. Form the mixture into a loaf shape on a broiler pan, which will allow the fat to drain. (Line the bottom of the pan with foil to avoid a big mess!)
  • Lay bacon slices over the top, tucking them underneath the meatloaf.
  • Make the sauce: add ketchup, brown sugar, mustard, and hot sauce in a mixing bowl. Stir together. Pour 1/3 of the mixture over the top of the bacon. Spread with a spoon.
  • Bake for 45 minutes, then pour another 1/3 of the sauce over the top. Bake for another 15 minutes. Slice and serve with remaining sauce.

Beef Taquitos


Ingredients
1-2 Lbs. lean roast beef
1 pkg. onion soup mix
1 c. water
a few shakes of hot sauce (Tabasco etc..)
Shredded cheddar cheese
Corn tortillas (at least 30)
Oil
DirectionsSear beef on all sides and put in crock-pot with onion soup mix, water, and hot sauce. Heat on low for 8-10 hours. Remove beef from crock-pot and shred. Soften corn tortillas in oil and let drain on paper towels. Add a little cheese and beef to each tortilla and roll up (remember to add cheese first, THEN beef.. that way the cheese won't melt out). Place taquitos seam-side down on a lightly greased cookie sheet at 400-degrees for 6-8 minutes. Turn taquitos once and bake for another 5-6 minutes or until taquitos are nice, golden brown, and slightly crispy (you could also deep fry them if you'd rather). Serve with sour cream, salsa and/or guacamole.
