Green Chile Pork
These are our favorite pork burritos!!
Ingredients:
Pork
1 small can Green Chiles
Green Enchilada Sauce
Crushed red pepper flakes
Chili Powder
Salt and Pepper
Taco seasoning (Sometimes)
Directions:
Throw everything into the crock pot. We just do about an inch of green enchilada sauce on the bottom. Cause we buy the bulk can of sauce so we only end up using half of it. Set the crock pot on low for 6-8 hours. No water needed, the enchilada sauce is moist enough. If anything this turns out a little too soupy for us sometimes. Still working on fixing that. Always delicious though!
Toppings for Burrito:
Guacamole
Refried beans (with water added)
Cheese
Sour Cream
Green Enchilada sauce (sometimes)
Lettuce
Fresh Tomatoes

Beef and Bean Burritos
As you can tell, I'm not a red sauce fan, so for the recipe we just used green enchilada sauce. (we also cooked the beef in some sauce too) These were super easy, fast, and delicious!
Ingredients
- 2 pounds Ground Beef (we used 1 lb.)
- ½ whole Medium Onion
- 1 can (7 Ounce) Mexican Tomato Sauce Or Enchilada Sauce
- Salt And Pepper, to taste
- Cumin, Oregano, Chili Powder, Garlic To Taste
- 1 can (28 Ounce) Refried Beans
- ¾ cups Grated Cheddar Cheese
- 12 whole Burrito-sized Flour Tortillas
- Extra Grated Cheese, For Sprinkling
- Extra Sauce, For Drizzling
- Cilantro Leaves, Optional
- Optional Filling Ingredients: Mexican Rice, Sour Cream, Guacamole, Green Chilies, Pico De Gallo
Directions:
- Brown ground beef with onion and season to taste. Pour in sauce and simmer over low heat. Add water if mixture gets too dry.
- Heat refried beans in a saucepan. Add cheese and stir in till melted. Keep warm.
- Heat tortillas in microwave for one minute.
- Spread a small amount of beans on each tortilla. Add meat. Fold over ends, then roll up. Place two burritos on a microwave-safe plate. Drizzle red sauce over the top and sprinkle with more grated cheddar. Microwave for one minute, or until cheese is melted and burritos are very hot. Serve immediately.
- OPTIONAL: Fill burritos with any optional ingredients you like. (I love them full, but my boys like them very plain.)

Spicy Dr. Pepper Shredded Pork
Our favorite dinner of ALL time is Pork tacos!! Pork is also so fun to make, as my favorite infomercial would say "Just Set It, and Forget it!" You can throw anything in the crock pot and let it cook to perfection! LOVE IT! Experimenting is always fun too! :) This is probably one of our favorites tho, it was a perfect sweetness, and a nice spicy after taste! Superb!
Ingredients:
1 whole Large Onion
1 whole Pork Shoulder ("pork Butt") - 5 To 7 Pounds ( we usually only use half a pork)
Salt And Freshly Ground Black Pepper
1 can (11 Ounce) Chipotle Peppers In Adobo Sauce
2 cans Dr. Pepper
2 Tablespoons Brown Sugar
Directions:
Ingredients:

Directions:
- Peel the onion and cut it into wedges. Lay them in the bottom of crock pot.
- Generously salt and pepper the pork roast, then set it on top of the onions in the pan.Pour the can of chipotle peppers over the pork (include the sauce.) Pour in both cans of Dr Pepper. Add brown sugar to the juice and stir in.
- Cook for at least six hours, turning roast two or three times during the cooking process. Check meat after six hours; it should be absolutely falling apart (use two forks to test.) If it’s not falling apart, keep it cooking for another hour.
- Remove meat from pot and place on a cutting board or other work surface. Use two forks to shred meat, discarding large pieces of fat. Strain as much of the fat off the top of the cooking liquid as you can and discard it.(I didn't know how to do this, so we just left it) Return the shredded meat to the cooking liquid, and keep warm until ready to serve. This completes the meal and the juices soak inot the pork!
- Then we got our corn tortillas, sour cream, avocado, refried beans, and cheese, layered them on and ate till we were sick!

Mango Salsa
Ingredients:
2 Mango's
3 Avocado's
1/2 a Red Onion
Bag of corn
1-2 cans Black Beans
1 bottle Zesty Italian Dressing
1/3+ Cups Sugar
Salt to taste
Directions:
Slice and Dice all ingredients (Mango, Avocado, Onion) and put them in a bowl. Add corn, drain and rinse black beans and add them. Pour in as much of the dressing as desired; about 1/3 of the bottle. Add sugar and salt to taste, and vwala!! DeLiCiOuS Mango Salsa, eat with ships or on tacos, anything!

Companeros
We first had these from Brad's friend Jason in Arizona, they are made in South America in Chile or Argentina. Super easy and Delicious!
Ingredients
Hot Dogs
Hot Dog buns
Desired Condiments (Mustard, Ketchup, and Mayonnaise typically)
Onions
Tomatoes
Avocado sliced
Cook the hot dugs and put it all on the bun! :) Delicious!

Beef Taquitos
Ingredients
1-2 Lbs. lean roast beef
1 pkg. onion soup mix
1 c. water
a few shakes of hot sauce (Tabasco etc..)
Shredded cheddar cheese
Corn tortillas (at least 30)
Oil
DirectionsSear beef on all sides and put in crock-pot with onion soup mix, water, and hot sauce. Heat on low for 8-10 hours. Remove beef from crock-pot and shred. Soften corn tortillas in oil and let drain on paper towels. Add a little cheese and beef to each tortilla and roll up (remember to add cheese first, THEN beef.. that way the cheese won't melt out). Place taquitos seam-side down on a lightly greased cookie sheet at 400-degrees for 6-8 minutes. Turn taquitos once and bake for another 5-6 minutes or until taquitos are nice, golden brown, and slightly crispy (you could also deep fry them if you'd rather). Serve with sour cream, salsa and/or guacamole.
