Green Chile Pork


These are our favorite pork burritos!!

Ingredients:
Pork
1 small can Green Chiles
Green Enchilada Sauce
Crushed red pepper flakes
Chili Powder
Salt and Pepper
Taco seasoning (Sometimes)

Directions:
Throw everything into the crock pot.  We just do about an inch of green enchilada sauce on the bottom.  Cause we buy the bulk can of sauce so we only end up using half of it.  Set the crock pot on low for 6-8 hours.  No water needed, the enchilada sauce is moist enough.  If anything this turns out a little too soupy for us sometimes.  Still working on fixing that.  Always delicious though!

Toppings for Burrito:
Guacamole
Refried beans (with water added)
Cheese
Sour Cream
Green Enchilada sauce (sometimes)
Lettuce
Fresh Tomatoes

Pressure Cooked Pork Chops

Pressure Cooked!!!  Delicious and done in minutes!! 

Prep Time: 10 min.
Total Time: 25 min.
Servings: 6-8

Ingredients

8 center-cut pork chops  (I used 3 and maybe half an onion)
1 cup water
1 small onions
4 -6 medium diced potatoes
3 tablespoons steak sauce or 3 tablespoons Worcestershire sauce
1/4 cup butter
pepper
salt
carrots 

Directions

1. Brown pork chops in pressure cooker on both sides (use tongs easier) in 1/2 of the butter then salt and pepper well. (NOTE - Do NOT cover pan yet).
2. Have your potatoes and carrots already peeled and chunked into healthy meaty portions.
3. Have your onion diced into small pieces.
4. Take out pork chops with tongs and set aside for a moment while you add the onions and rest of butter to pork fat. then add potatoes and carrots (if using) then pork chops add the cup of water and the steak sauce ( the recipe called originally for Worcestershire sauce but I liked the steak sauce better) Put lid on and lock bring to high pressure once pressure is established put timer on for 15 minutes, Then use the regular release method and it is unbelievable a great dinner with so much taste in less than 30 minute (including prep if your good with a Knife)

Spicy Dr. Pepper Shredded Pork

Our favorite dinner of ALL time is Pork tacos!! Pork is also so fun to make, as my favorite infomercial would say "Just Set It, and Forget it!"  You can throw anything in the crock pot and let it cook to perfection!  LOVE IT!  Experimenting is always fun too! :)  This is probably one of our favorites tho, it was a perfect sweetness, and a nice spicy after taste! Superb!

Ingredients:
1 whole Large Onion
1 whole Pork Shoulder ("pork Butt") - 5 To 7 Pounds ( we usually only use half a pork)
Salt And Freshly Ground Black Pepper
1 can (11 Ounce) Chipotle Peppers In Adobo Sauce
2 cans Dr. Pepper
2 Tablespoons Brown Sugar

Directions:

  • Peel the onion and cut it into wedges. Lay them in the bottom of crock pot.
  • Generously salt and pepper the pork roast, then set it on top of the onions in the pan.Pour the can of chipotle peppers over the pork (include the sauce.) Pour in both cans of Dr Pepper. Add brown sugar to the juice and stir in.
  • Cook for at least six hours, turning roast two or three times during the cooking process. Check meat after six hours; it should be absolutely falling apart (use two forks to test.) If it’s not falling apart, keep it cooking for another hour.
  • Remove meat from pot and place on a cutting board or other work surface. Use two forks to shred meat, discarding large pieces of fat. Strain as much of the fat off the top of the cooking liquid as you can and discard it.(I didn't know how to do this, so we just left it) Return the shredded meat to the cooking liquid, and keep warm until ready to serve. This completes the meal and the juices soak inot the pork!
  • Then we got our corn tortillas, sour cream, avocado, refried beans, and cheese, layered them on and ate till we were sick!

Pulled Pork and Saueteed Onion Sandwich


My picture isn't as good looking, but it reminds me of what it was and how ours personnally turned out.
 
The Pork:(adapted from sistersstuff.blogspot.com)
2 1/2-3 1/2 lbs. pork loin roast
1/4 cup brown sugar
1/2 cup Worcestershire sauce
1/2 tsp. dried oregano
1/2 tsp. powdered ginger
1 tsp. salt
1 tsp. chili powder
1 tsp. garlic powder
2 Tbsp. dried minced onion

Add all ingredients to a crock pot and cook on high for 4-5 hours or on low all day. Shred meat once done and let sit in the leftover sauce for about 10-15 minutes. Adjust sauce amount to fit the size of your roast. This makes quite a bit of meat and is great used in burritos and salads for left-overs, not to mention left over sandwiches.

The Onions:
Thinly slice 2-3 med onions and sauteed with 2 TBSP olive oil on med/low heat. Move them around in the pan often so they don't burn. They are done once soft, semi-transparent and golden brown.

The Bun:
Use any type of bun or roll you would like. I like to heat and/or toast my buns under the broiler or in the same pan the onions were cooked in. Spread a dab of mayo on your bun.

The Cheese:
Use a slice of Swiss or provolone per bun. Melt it on the bun in the micro or oven.

The Sandwich:
Once you have all your ingredients prepared build your sandwich from the bottom up . . . bun, cheese, pork, onions, bun. Time to eat!
